Chewy Vegan Chocolate Chip

Ingredients
  

  • 3 cup(s) oat flour
  • 2 cup(s) flour
  • 2 cup(s) sugar
  • 1/2 cup(s) flax seed grind into meal
  • 1/2 cup(s) tapioca flour or potato starch
  • 3 tsp xanthan gum
  • 2 tsp baking soda
  • 2 tsp salt
  • 1 cup(s) applesauce
  • 3 tbsp vanilla extract
  • 1 3/4 cup(s) coconut oil softened
  • 2 cup(s) dark chocolate chips or chunks

Method
 

  1. Preheat oven to 325 degrees.
  2. Mix oat flour through salt in mixing bowl.
  3. Stir in applesauce, vanilla, coconut oil until combined, then fold in chocolate.
  4. Bake 14 minutes until golden brown, rotating tray half way. Let cool before removing from tray. (adapted from Babycakes Covers the Classics “Babycakes NYC Chocolate Chip Cookies”)
