Sweet Potato Fries

Here is another way to enjoy beta carotene rich sweet potatoes. They are a simple, delicious and nutritious afternoon snack or side dish for a meal.

Ingredients
  

  • 4 sweet potato(es) scrubbed and cut into 8 wedges
  • 1 tbsp olive oil approximate
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 lime OPTIONAL; cut in wedges

Method
 

  1. Preheat oven to 400 degrees.
  2. Put potatoes on a baking sheet and sprinkle lightly with olive oil, cumin, paprika, and salt & pepper. Toss to coat and spread evenly over pan in a single layer.
  3. Place in oven and set timer for 40 min. Check a few times to stir potatoes.
  4. Serve with ketchup, ketchup mixed with bar-b-q sauce, or wedges of lime. See OTL video in which I cut sweet potatoes for the soup and for sweet potato fries.
