
Sweet Potato Fries
Here is another way to enjoy beta carotene rich sweet potatoes. They are a simple, delicious and nutritious afternoon snack or side dish for a meal.
Ingredients
Method
- Preheat oven to 400 degrees.
- Put potatoes on a baking sheet and sprinkle lightly with olive oil, cumin, paprika, and salt & pepper. Toss to coat and spread evenly over pan in a single layer.
- Place in oven and set timer for 40 min. Check a few times to stir potatoes.
- Serve with ketchup, ketchup mixed with bar-b-q sauce, or wedges of lime. See OTL video in which I cut sweet potatoes for the soup and for sweet potato fries.
