Pizza “On-The-Fly”

It’s good to have a ready made crust on hand for that extra busy day. Most stores will sell frozen chicken with a marinara style sauce, and that can be kept in the freezer as well.* Make this vegetarian by omitting the meat and adding more of your favorite vegetables like mushrooms or artichoke hearts.
Prep Time 10 minutes
Total Time 25 minutes
Servings: 4 servings
Course: Poultry, Under 30 min., Vegetarian

Ingredients

  • 1 boboli pizza crust or any prepared crust
  • 1 cup(s) jarred red sauce
  • 2 cup(s) cooked chicken chopped, rotisserie or cooked stovetop
  • 1 bell pepper(s) any color, sliced 1/2″ by 1″
  • 2 tbsp black olives diced
  • 1/2 tsp cumin
  • 1 tsp oregano
  • 1 cup(s) shredded mozzarella
  • 1/4 cup(s) fresh basil sliced very fine and small

Method

  1. Unwrap crust and place on baking sheet. Preheat oven to 450 degrees.
  2. Spread red sauce over pizza, then top with chicken, peppers, olives, and sprinkle cumin and oregano over all. Add any other extra vegetables at this point. Finish with cheese.
  3. Bake 12 min. Slide onto large cutting board and sprinkle basil on top. Cut into 8 pieces. VARIATION: Mix in a little bar-b-q sauce with the red sauce for a different flavor and add cilantro rather than basil
