Chocolate Chip Cookies (w/ chia, avocado and dates)
I just discovered the superfood chia seeds, and now am on a quest to find ways to use them. Of course, they had to go in a chocolate chip cookie! The avocado is a great substitute for butter, and the dates a great one for sugar.

- Combine chia seeds, butter, brown sugar, dates, avocado, olive oil and vanilla in mixing bowl and blend thoroughly.
- Sprinkle flour, baking soda and salt over top and blend together. Add chocolate chips and mix. Add one or two tablespoons of water if the batter seems too thick.
- Bake at 350 degrees for 13 minutes. (Sometimes I make jumbo cookies with this batter and it will need a few more minutes of cooking because of their size.) OTL 2013
