Hot Day Chicken and Pasta Dinner

On a hot day it just has to be simple, so this is the day to use those frozen vegetables and a store cooked chicken. It is also a good day to look on the store shelves for some whole grain pasta noodles.

Ingredients
  

  • 1 tbsp butter
  • 2 cup(s) butternut squash smaller sized cubes
  • 1/2 cup(s) cottage cheese
  • 1 green onion diced
  • 2 garlic clove(s) crushed
  • 2 cup(s) string beans fresh or frozen
  • 2 cup(s) frozen mixed vegetables broccoli, bell peppers, etc,
  • 1 lb(s) spiral pasta noodles try whole grain quinoa, spelt, or wheat
  • 2-3 cup(s) cooked chicken cubed or shredded

Method
 

  1. Prep Work: Cook chicken in crock pot if applicable. Chop or shred chicken. Cook noodles. Wash and trim fresh string beans. Chop butternut.
  2. Cook noodles according to package directions.
  3. Melt butter in large skillet over medium low heat. Add butternut and don’t stir for 5 min.
  4. Mix in cottage cheese, fresh string beans (if using fresh), onion and garlic. Saute another 5 minutes stirring every 30 seconds or so.
  5. Add frozen vegetables and cook until warm, approx. 4 min.
  6. Mix in drained pasta and chicken, reserving 1/2 c. of the noodle water to loosen up the entree when all is combined.
  7. Add liquid if needed. Salt and pepper to taste, approx. 1 tsp each. OTL 2010
