Prep Work: Cook chicken in crock pot if applicable. Chop or shred chicken. Cook noodles. Wash and trim fresh string beans. Chop butternut.
Cook noodles according to package directions.
Melt butter in large skillet over medium low heat. Add butternut and don't stir for 5 min.
Mix in cottage cheese, fresh string beans (if using fresh), onion and garlic. Saute another 5 minutes stirring every 30 seconds or so.
Add frozen vegetables and cook until warm, approx. 4 min.
Mix in drained pasta and chicken, reserving 1/2 c. of the noodle water to loosen up the entree when all is combined.
Add liquid if needed. Salt and pepper to taste, approx. 1 tsp each.
