Immune Booster Soup

Is it an old wives’ tale, or does chicken noodle soup simmered with the bones really cure all ills? You decide. Give yourself enough time to let it simmer to get the marrow from the bones into the water and to blend the flavors. I suppose you could enjoy this delightful soup when in perfect health as well.

Ingredients
  

  • 1 1/2 lb(s) chicken on the bone or more
  • 3 stalks celery chopped
  • 3 carrots scrubbed and chopped 1/2″ pieces
  • 2 garlic clove(s) crushed
  • 1/3 cup(s) parsley chopped
  • 2 tsp oregano
  • 3 oz(s) egg noodles

Method
 

  1. Place chicken in pot followed by chopped vegetables and spices.
  2. Add just enough water to cover ingredients. Bring to a low boil and then reduce heat to a low simmer. Simmer 1 hour.
  3. Boil noodles according to package directions, rinse and set aside.
  4. Remove meat from bones, chop and return to pot, and then salt and pepper to taste. Add noodles to individual servings so that they do not get mushy in leftovers. OTL 2011
