
Beet to the Thyme
I couldn’t resist with the title. Beets have so much natural sugar that this really appeals to your sweet tooth. If you like roasted vegetable anyhow, you are in for a sweet and salty treat that is also rich in natural antioxidants. I ususally don’t put beets with other vegetables because they turn everything pink, so this is a great way to cook them without that concern.

- Prep Work: Peel and slice beets. Peel garlic cloves. Make vinegarette (step # 5).
- Preheat oven to 400 degrees. Peel garlic cloves.
- Slice beets ¼” thick. Place on baking sheet and drizzle a little olive oil and toss to coat both sides of beet slices.
- Very lightly salt and and toss with crushed garlic. Lay in single layer on baking sheet.
- Bake 30-40 minutes or until tender.
- Combine 4 tablespoons olive oil, vinegar, and thyme. Drizzle some of oil mixture over beets after baking. Top with cheese curls and light pepper.
