Beet to the Thyme

I couldn't resist with the title. Beets have so much natural sugar that this really appeals to your sweet tooth. If you like roasted vegetable anyhow, you are in for a sweet and salty treat that is also rich in natural antioxidants. I ususally don't put beets with other vegetables because they turn everything pink, so this is a great way to cook them without that concern.

Ingredients
  

  • 6 beet(s) peeled and sliced 1/4"
  • 6 tbsp olive oil divided
  • 1 1/2 tbsp balsamic vinegar
  • 2 tsp fresh thyme minced, or half as much dried
  • 3 garlic clove(s) crushed
  • 2 oz(s) parmesan cheese make curls with vegetable peeler

Method
 

  1. Prep Work: Peel and slice beets. Peel garlic cloves. Make vinegarette (step # 5).
  2. Preheat oven to 400 degrees. Peel garlic cloves.
  3. Slice beets ¼" thick. Place on baking sheet and drizzle a little olive oil and toss to coat both sides of beet slices.
  4. Very lightly salt and and toss with crushed garlic. Lay in single layer on baking sheet.
  5. Bake 30-40 minutes or until tender.
  6. Combine 4 tablespoons olive oil, vinegar, and thyme. Drizzle some of oil mixture over beets after baking. Top with cheese curls and light pepper.
