Black Bean Burgers

If you like black beans already, you will love them disguised in a hamburger bun. Salsa, avocado (or guacamole), and lettuce are the perfect toppings for this quick, tasty, and very heatlhy “pattie”.

Ingredients
  

  • 30 oz(s) black beans already cooked or from a can, drained
  • 3/4 cup(s) cilantro chopped
  • 3/4 cup(s) shredded monterey jack
  • 3/4 cup(s) bread crumbs fine bread crumbs
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 jalapeno pepper seeded and finely chopped
  • 1 egg(s)
  • 3/4 cup(s) salsa slightly drained if runny
  • 1 avocado(es) optional topping
  • 2 cup(s) romaine lettuce large pieces

Method
 

  1. Prep Work: Soak and cook beans if you don’t want to use canned. (See OTL tutorial) Chop cilantro. Grate monterey jack cheese. Slice avocado before serving.
  2. Preheat oven to 350 degrees.
  3. Place beans in a bowl and mash with a fork. Stir in all ingredients through the egg.
  4. Shape mixture into 6, 1/2″ thick patties and place on a greased baking sheet.
  5. Bake for 20 minutes, turning them once at 10 minutes very carefully.
  6. Place hamburger buns face down on another baking sheet and add them to oven for the last 3-4 minutes, or until lightly browned.
  7. Top bun with pattie, salsa, avodado, and lettuce leaf.
