Fresh Blackberry Pie

They come all at once, those berries! Out on the praire they would make jam, but here is another wonderful way to use the abundance of blackberries that summer provides. Blackberries are an excellent source of vitamins C, K, and fiber.

Ingredients
  

  • 1 frozen pie crust
  • 6 cup(s) fresh blackberries
  • 1/3 cup(s) flour
  • 1/2 cup(s) turbinado sugar
  • 1 tsp cinnamon
  • 1 lemon squeeze juice from half, approx. 1 Tbsp.

Method
 

  1. Preheat oven to 325 degrees.
  2. Pour washed and drained blackeberries into a bowl and toss with all other ingredients.
  3. Pour mixture into pie crust and bake for 40-45 minutes. Liquid should be bubbly. Could take more time if other things are in the oven.
