Spaghetti Squash Pancakes

This is perfect for leftovers, or l buy two at Costco like I did and create lots of leftovers for dishes like this. You can NEVER eat too much squash!!

Ingredients
  

  • 2 cup(s) spaghetti squash baked
  • 4 egg(s)
  • 1/4 cup(s) sugar
  • 2 tbsp butter
  • 1 cup(s) flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1 green apple peeled and diced
  • maple syrup

Method
 

  1. Combine cooked squash, eggs, sugar and softened butter in a mixing bowl. Mix well.
  2. Sprinkle four, salt and baking powder over top and mix just until combined.
  3. Fold in apple pieces.
  4. Heat butter in a skillet on med/high, drop batter into pan and flip after bubbles cover the surface of the pancake, approx. 2 minutes each side.
  5. Serve with butter and maple syrup. *You can add spices like cinnamon, nutmeg, or allspice. All go well with these pancakes. OTL 2021
