Method
- Combine cooked squash, eggs, sugar and softened butter in a mixing bowl. Mix well.
- Sprinkle four, salt and baking powder over top and mix just until combined.
- Fold in apple pieces.
- Heat butter in a skillet on med/high, drop batter into pan and flip after bubbles cover the surface of the pancake, approx. 2 minutes each side.
- Serve with butter and maple syrup. *You can add spices like cinnamon, nutmeg, or allspice. All go well with these pancakes. OTL 2021
