
Vitality Brownies (w/ juicing fiber)
The battle to eat well rages on all over the land, and even in my house. “Something with vegetable fiber in it is not a brownie”, they cry, but I reply, “Champions don’t feed their bodies the ingredients like in the desserts you are looking for.” Always a decision. Do you want to be healthy, look good, feel good…it happens one decision at a time, and finally those decisions become habits. This brownie choice uses the leftover fiber from juicing fresh vegetables, raw honey for maximum nutrients and flax for fiber and omega 3 oil.

Method
- Preheat oven to 350 degrees. Place eggs, vanilla and juicing fiber in blender and puree until mostly smooth. Spoon out into mixing bowl.
- Add stevia, honey, dates and flax gel (made from flax meal and water) to the mixing bowl and mix at high speed until well blended.
- Sprinkle cocoa, flour, baking soda and salt on top and combine all. Add nuts and chocolate chips; mix just until combined.
- Pat batter into bottom of greased 13×9 pan. Bake 22-25 minutes; brownies will not pull away from sides as others do. Let cool then cut. Frosting: If you feel like compromising a bit, these take on a whole new flavor when frosted with chocolate frosting, and you might draw in some of the more reluctant eaters!
