Method
- Preheat oven to 400 degrees. Pierce the squash all the way through the skin and flesh in 5-6 places all around it.
- Lay on baking sheet or dish and place in center of oven on a rack. Remove after 50 min.; skin should be more pale in color and slightly wrinkled looking.
- Place on cutting board and cut in half. Scoop out seeds with a large spoon, and then scoop out the stringy "noodles" which is all the rest.
- Toss in olive oil or butter, salt and pepper. Sprinkle with a little brown sugar and cinnamon.
