Method
- Heat oven to 325 degrees. Grease 11x7 or 9x9 pan.
- Beat first 6 ingredients in large mixer until thoroughly combined. Sprinkle dry ingredients over top and mix just until combined.
- Pour into pan and bake 40-45 min., or until a toothpick inserted in the center comes out clean. Serve with a topping...suggestions below. Toppings: 3/4 c. plain yogurt (sweetened with 3 Tbsp. powdered sugar, lemon zest and lemon juice), whipped cream, or vanilla ice cream. Protein Booster Option: Grind 1/2 c. quinoa grains in a small coffee grinder and use quinoa flour to replace 1/2 c. of the ww pastry flour.
