Chocolate Drop Cookies

Chocolaty darkness hides the unusual addition of potassium rich dates, but it can't hide their sweetness or texture. For chocolate lovers this is a healthier alternative to straight chocolate candy. For everyone, they're a real treat.

Ingredients
  

  • 1/2 cup(s) sucanat or brown sugar
  • 1/2 cup(s) butter organic if possible, softened
  • 1 tsp vanilla extract
  • 2 tbsp applesauce or water
  • 1 egg(s) yolk only
  • 1 cup(s) whole wheat pastry flour or GF mix
  • 1/3 cup(s) oats ground in coffee grinder to meal
  • 1/2 cup(s) cocoa powder
  • 1/2 cup(s) dates chopped small

Method
 

  1. Preheat oven to 350 degrees.
  2. Combine sugar, butter, vanilla, applesauce and egg (yolk only) in mixing bowl.
  3. Sprinkle all other ingredients over top and mix in.
  4. Drop by rounded teaspoons onto baking sheet and bake for 12 minutes. OTL 2010
