Coffee Cookies (to have with coffee!)

Ben wanted something full of spices, slightly sweet, healthy, and very crunchy to eat with his mornig cup of coffee. So here is the latest version of this cookie I have been trying to make to order for him, and he loves it. Will you? These dynamos are sweetened with dates, molasses, and 3 Tbsp. of sugar or honey, the fat is coconut oil, and pepitas and sunflower seeds add some wonderful protein.

Ingredients
  

  • 1/2 cup(s) coconut oil
  • 1/4 cup(s) butter OPTIONAL (for flavor mostly)
  • 1 egg(s)
  • 1 egg yolk
  • 3 tbsp sugar I use coconut sugar
  • 1/2 cup(s) molasses
  • 1 cup(s) dry date(s) check for pits and chop fine; or banana
  • 1 cup(s) gluten free baking flour mix
  • 2 cup(s) oats or 3 c. oats and only 1/2 c. flour
  • 3/4 tsp salt
  • 2 tsp allspice or more
  • 2 tsp nutmeg or more
  • 2 tbsp powdered ginger or more to taste
  • 1/2 tsp cayenne pepper
  • 1/2 cup(s) raisins
  • 1/2 cup(s) pumpkin seeds pepitas
  • 1/2 cup(s) sunflower seeds
  • 1/2 cup(s) chocolate chips OPTIONAL!

Method
 

  1. Preheat oven to 350 degrees.
  2. Blend coconut oil, egg, molasses and sugar until well combined. Add dates and blend more. It will be lumpy.
  3. On top of blended mixture sprinkle flour, oats, salt, allspice, nutmeg, ginger and cayenne. Mix all together.
  4. Add raisins, pumpkin seeds and sunflower seeds.
  5. Drop by 1/4 cup on cookie sheet, flatten gently and smooth sides if desired. Bake 14-16 minutes, or even longer for extra crispy. If replacing dates with banana, the time might be less, just check after 12 minutes. OTL 2020
