K-Rich Spaghetti Noddles

If you want the maximum Vitamin K punch try swiss chard or parsley with roughly 9,000mcg. per serving.. Not your favorites? Then the next best green source is kale with 6,000, and it has a very pleasing taste for a green. Pasta made with white flour is not something we recommend, but to make the transition easier for pasta lovers we suggest going half and half with whole wheat or another whole grain pasta noodle. Navy beans round out this nutrition powerhouse with added protein, fiber, and minerals. Pure vegetarians will want to omit the bacon and add some Worcestershire sauce for more flavor. Ingredients
  

  • 2 slice(s) whole wheat bread *see Prep Work
  • 5 garlic clove(s) crushed
  • 6 slice(s) turkey bacon optional; cut into small pieces
  • 1 onion diced fine (minced)
  • 1/4 tsp red pepper flakes
  • 1 1/4 cup(s) chicken broth
  • 1/2 lb(s) spaghetti noodles
  • 1/2 whole wheat spaghetti noodles
  • 1 lb(s) kale cut 1/4" by 1 1/2" pieces
  • 1 cup(s) fontina cheese shredded, or other strong favorite
  • 15 oz(s) white navy beans drained
  • 1-2 tbsp Worcestershire sauce if not using bacon

Method
 

  1. Prep Work: Pulse or hand crumble bread into coarse crumbs. Mince onion. Chop kale. Shred cheese.
  2. Do all prep work before starting. Cook spaghetti according to package directions. Add kale to pot with noodles to cook.
  3. Heat 2 Tbsp. olive oil in skillet w/ medium-high heat and saute bread crumbs 3 min. Add 3 cloves garlic and saute 1 min. more. Season with salt and pepper and transfer to a bowl.
  4. Return skillet to medium-high heat and cook bacon 2 min.; then add onion for 6 min. more. Add garlic and red pepper flakes for 30 seconds. (Without bacon, saute onions in olive oil and add Worcestershire sauce with garlic.)
  5. Add broth to skillet and lower heat to simmer. Cover and remove from heat.
  6. Drain noodles and kale and return to pot or serving dish. Stir in beans and cheese; then mix in onion sauce. Sprinkle servings with bread crumbs.
