Method
- Preheat oven to 350 degrees.
- Combine first 5 ingredients in mixing bowl. Mix until smooth.
- Grind quinoa and add to mixing bowl.
- Sprinkle quinoa, salt and soda on top of peanut butter mixture and blend together. ( Batter will be thick.) Mix in chocolate chips if using.
- Roll 1 Tbsp. of batter between palms and place on baking sheet. Flatten with fork and press peanuts into top if using.
- Bake for 8-10 minutes until golden brown. OTL 2010
