Oatmeal Nut Cookies (plus remake)

If you really love walnuts and oatmeal in your cookies, then this one is for you. Although it is a dessert, the 3 1/2 c. of walnuts provide omega 3 fatty acids and protein, and the oatmeal is a great supplier of fiber. We added butterscotch chips because we had some and they were great. See what you can add! Lower fat and sugar remake ideas are at the end.

Ingredients
  

  • 1 cup(s) butter organic is best
  • 1 cup(s) brown sugar or sucanat
  • 1/2 cup(s) sugar turbinado or raw
  • 1 egg(s)
  • 1/4 cup(s) water
  • 1 tsp vanilla extract
  • 3 cup(s) oats
  • 1 cup(s) whole wheat flour or ww pastry flour
  • 3 1/2 cup(s) walnuts or mix with pecans
  • 1 tsp salt
  • 1 tsp baking soda

Method
 

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl combine butter through vanilla.
  3. Sprinkle dry ingredients over top; oats, flour, nuts, salt and soda.
  4. Add chips if desired.
  5. Place cookies on baking sheet and bake 15 min. REMAKE IDEAS: - Replace 1 c. butter with 1/2 c. organic butter and 1/2 c. olive oil, or replace 1/2 cup of the butter with 1/4 cup water and 1/4 c. flax meal gel (combine and let sit 10 min.) - Omit (turbinado, raw) sugar completely. - Add 1/2 c. butterscotch chips, dried cranberries, etc.
