Preheat oven to 350 degrees. Cream together the oil, sugar, applesauce and vanilla until smooth.
Sprinkle all dry ingredients over top and blend in until combined. Grind walnuts coarsely in coffee grinder or chop with knife; stir into batter with chocolate chips.
Drop by rounded tablespoons (makes 12 large) or teaspoons (makes 24 regular sized), depending on the size of cookie desired; flatten slightly with palm of hand.
Bake 15 minutes or until golden on the edges.
