Method
- Cut potatoes into 1" chunks and boil in water until tender, approx. 15 min.
- Combine all other ingredients in blender.
- Drain potatoes reserving 1/2 c. water. Mash in pot while still warm with potato masher. Pour in sauce from blender, loosening with reserved potato water to get desired consistency.
- Add 1/4 tsp. each salt and pepper, then continue to add to taste. Can be topped with chopped chives or green onion.
