Method
- Place coconut in dry skillet and medium heat. Stir approx. every 30 seconds until golden brown on edges, approx. 3-5 min. Take pan off heat.
- In blender combine cottage cheese and honey until smooth.
- Layer glass cup with 1/4 c. pineapple, 2 Tbsp. cottage cheese mixture, 1/4 c. pineapple, cottage cheese again, and ending with the rest of the pineapple. Sprinkle with coconut.
