Spring Slaw

Cabbage is a rich source of cancer fighting anti-oxidants, so I am always looking for a place to put it. Here it is the star, and adding the sweetness of oranges and raisins is a nice touch for spring or summer. I like to cut my cabbage fresh, but you can certainly save some time by purchasing it pre-shredded. You can also replace some or all of the mayonnaise with plain yogurt.

Ingredients
  

  • 1/2 cabbage
  • 1/4 cup(s) raisins
  • 1 green onion minced
  • 2 orange or pineapple, cut into 3/4" pieces- see video
  • 1/3 cup(s) mayonnaise can mix or replace w/ yogurt
  • 2 tbsp apple cider vinegar
  • 2 tbsp lemon juice

Method
 

  1. 1. Toss cabbage, raisins, onion and oranges in a salad bowl. Mix the other ingredients together first and then toss with cabbage. Salt to taste.
  2. *When salting, do it is small increments because you certainly don't want more than necessary, but there is also a point where it goes from a little bland to delicious.
